Warming comfort food in a spectacular setting

Cocido madrileño, a hearty stew from Madrid
Cocido madrileño is a delicious stew that is a winter classic.
This traditional recipe is Spanish comfort food at its finest. A warming broth, with meatballs prepared with chicken, beef and pork, along with a selection of cured meats including black pudding and chorizo, which add a delicious smoky touch. Then the bacon, chickpeas, potatoes, carrots, leeks and cabbage are added, and the whole dish is simmered slowly to create a soul-warming stew. At Balneario Illetas, we serve it the traditional Spanish way, in three servings: the first is the broth, which is cooked with small noodles, then the chickpeas and vegetables, and finally the meat. But we also add a Mediterranean twist that can only be truly appreciated by the sea.

Fabes con almejas (clams with white beans): the perfect fusion of land and sea
Winter is also the ideal time to enjoy seafood dishes that bring together the bounty of land and sea.
Our fabes con almejas (clams with white beans) is a classic dish from Asturias in northern Spain. Creamy, tender Asturian white beans are slowly cooked with fresh clams, along with a splash of white wine and some garlic and parsley, creating a succulent dish that oozes flavour. It's perfect for savouring while gazing at the sea and enjoying magical sunsets at our restaurant overlooking Illetas beach, near Palma.

Tuna Marmitako: A hearty sailor’s stew
Our tuna marmitako is a must-try winter dish for fish-lovers. Originally from the Basque country in northern Spain, this traditional fisherman's stew is perfect for enjoying by the sea.
Fresh tuna, potatoes, red and green peppers, a touch of paprika and bay leaves are slowly simmered together to create an aromatic and flavourful stew. The marmitako is the perfect winter warmer as you enjoy the sea breeze and breathtaking views from our seaside restaurant in Illetas.
